  Seminar With Beth Tully, Master Chocolatier & Jamie Stratton, Certified Wine Educator

The Chocolates
Master Chocolatier Beth Tully of Cocoa Dolce, will offer participants the chance to taste chocolate by region, something most of us associate only with wine. We’ll try 10 different chocolates, divided by percentage of cocoa solids, growing region and bean origin. Beth, who sells gourmet, hand-crafted artisan chocolates, specialty coffees and more, will discuss how to taste chocolate and outline the key components to a chocolate tasting. Everyone will have a scorecard and purchasing information about the chocolates to keep and use as baking needs require!

 
The Wines
Certified Wine Educator Jamie Stratton, Wine Director at Jacob Liquor, will lead participants in a discussion and tasting of these four wines chosen to pair with and show off, the subtleties of the outstanding chocolates.

 
Mumm Cordon Rouge NV
All the richness and finesse of the Mumm vineyard is expressed in Cordon Rouge. The robe: a fresh golden yellow with jade tints, an elegant stream of bubbles rising to form a rich, lively foam. The nose develops aromas of lemon and grapefruit, with notes of white peach, apricot and acidulous apple. Lingering notes of vanilla, dried fruit and honey. The flavour: complex fresh fruit and caramel flavours are the mark of a great wine. A touch of acidity and remarkable length in the mouth make a consistently delightful finish.

 
2003 Columbia Crest Reserve Syrah
This reserve Syrah, crafted in a Cote Rotie style, boasts generous Syrah aromatics of white pepper, cocoa and blueberry, with hints of Viognier’s subtly sweet orange peel, pear and rose petal. Spice and earthy overtones are followed by mouth-filling flavors of dark chocolate, cocoa, and roasted coffee bean and a seductive blueberry-raspberry finish

 
2003 Seghesio Old Vines Zinfandel
This wine combines spicy, lush black fruit from Alexander Valley with cooler Dry Creek Valley fruit that offers structure and Zinfandel’s classic briary and raspberry flavors

 
Churchill 10yr Tawny Port
The Churchill's 10 Year Old Tawny has a complex fragrance of roasted nuts and sweet fruit. There is impeccable definition and richness, a velvety texture and long finish.
