Food Wednesday July 17, 2002 – 7 p.m. Wichita AIWF is honored to host Gary Beauchamp, PhD., presenting his AIWF National Program: UMAMI-THE FIFTH BASIC TASTE? Gary is the director of the Monell Chemical Senses Center of Philadelphia at the University of Pennsylvania and the author of more than 250 publications. He has been a member of AIWF for more than 10 years. Everyone knows that there are four basic tastes: sweet, sour, salty, and bitter. Wrong. A fifth taste; umami – has been admitted to the gustatory pantheon, and a growing awareness of its role in the flavor and pleasurable sensations of food is changing the way food processors, nutritionists, and chefs think about what they do. The artful use of umami can make mediocre fare taste better, and good food taste great. Gary’s dynamic and informative presentation will explain and highlight this new fifth taste in a practical, fun and interactive manner. All this accompanied by a spectacular menu and complementary wines that will make for a very memorable evening of food education!
